I admit I am a sucker for cold noodle salads. They just scream summer to me with fresh veggies, pasta, and a zippy dressing! But to add a fun twist on pasta salad this summer, I subbed out traditional ingredients for a fun Asian twist!

This Asain noodle salad is fairly easy to throw together if you have all of the ingredients. Some are fairly basic, like cucumber and avocado. Edamame on the other hand can be a bit tricky at my grocery store. Shelled edamame is sometimes in the produce section and shell on edamame can be found frozen. When you do find it, stock up! Edamame is high in fiber, vitamins, and is a complete protein making it great for meat-free recipes!

Once the chopping is done, I make the dressing by whizzing everything in a blender. I added some almond butter to the dressing to make it richer without adding dairy.

I saved the noodles for the last step. This is because rice noodles can sometimes get sticky if they sit for too long. Tossing them in a bit of dressing prevents sticking before adding them to the salad.

The last step is to toss it all together and season with salt and pepper. I think this salad is perfect for picnics because it does not have mayo or dairy that can spoil if out in the sun.
Let me know if you guys try it!
