White Corn Salsa

Hey hey! Hope everyone is enjoying August so far! I’m loving this weather we have been having up here. Jonathan and I are heading up to our cabin this week for some R+R, and I’ve been busy putting together our meals. One thing I love having up at the cabin is fresh salsa. Chips with fresh salsa is my favorite snack to tide me over from lunch until dinner. It’s not fancy, but it doesn’t need to be! It just needs to be good. This white corn salsa is a family favorite and I make it every summer.

This recipe came from my friend’s mom many years ago. Way back when I was in high school, I was over at a friend’s house and could not stop eating this salsa– it was addictive. She gave me the recipe and I have been making it ever since. I know it’ll be a favorite of yours, too!

I use white corn for this salsa to mix it up a bit. You can find white corn or sometimes called shoepeg corn, in the canned section of the grocery store. It is usually pretty easy to find.

Be warned, this recipe does test your chopping skills. Fortunately, chopping is the longest step.
